We all know the daily struggle of trying to prepare a healthy dinner while trying to satisfy your partner and kids, never mind yourself?! 🤦 But, we reckon the whole family will be putting their hands up for seconds with this tasty almond butter satay stir-fry recipe.
½ cup smooth almond butter
Juice of 1 orange
Juice of 1 lime
½ tsp sriracha sauce
¼ cup tamari sauce
½ tsp fish sauce
1 tsp grated ginger
2 garlic cloves, crushed
1 small broccoli
2 handfuls of green beans
2 x chicken breasts, sliced
First make the satay sauce by mixing together all the ingredients. Set aside.
Slice the chicken into bite sized pieces. Heat 1 tsp of coconut oil in a medium sized pan and cook the chicken. Set aside.
In the same pan heat a little extra coconut oil and stir fry the vegetables until cooked.
Add the chicken back into the pan along with the satay sauce. Cook for another couple of minutes until the everything is mix well and hot.
Serve with quinoa or brown rice as an option.
