Roast Kumara Salad with Almond Butter Dressing
Jazz up any salad with this delightful almond butter dressing recipe that goes really well with this roast kumara¬†variation ūü•ó
  • 1 medium sweet potato
  • 1 tsp of dried mix herbs
  • ¬ľ tsp himalayan salt
  • 1 Tbsp of oil
  • 1/2 of of a small broccoli, chopped into florets
  • 2 large handfuls of mesclun
  • 1‚ĀĄ2 an avocado
  • 1-2 Tbsp sunflower seeds
  • 2 Tbsp Poppy & Olive Smooth Almond Butter
  • 2 Tbsp lemon juice
  • 1/2 tsp honey
  • 1 small garlic clove, crushed
  • 1/2 tsp fresh grated ginger
  • Salt and pepper to season
  • 4 Tbsp water
  1. Pre-heat the oven to 180 degrees. Slice the kumara into bite-sized pieces and place on an oven tray. Drizzle with the oil, season with salt and mixed herbs. Mix well and bake for 20 minutes.
  2. Mix the broccoli through the kumara and continue roasting for another 15-20 minutes or until kumara is golden.
  3. Make the almond butter dressing by mixing together all the ingredients. 
  4. Place the salad ingredients into 2 serving plates, drizzle with the almond butter dressing.
